Filipino Chicken Tocino Recipe

Chicken tocino is a Filipino dish that typically consists of chicken, garlic, vinegar or lemon juice, soy sauce, black pepper, brown sugar, and water. It is traditionally served for breakfast with white rice. In this recipe, I use the tocino as a marinade for the chicken, as well as as a cooking liquid for the rice. It is best to use brown sugar as the main sweetener, but I used white sugar because I thought it would complement the other flavors better.

  • 5 cups of water
  • 2 bay leaves
  • 1 (2-inch) piece of fresh ginger
  • 1 garlic clove
  • 1 teaspoon of salt
  • 1/2 cup of sugar
  • 2 tablespoons of vinegar
  • 1 whole chicken

First, the ingredients are gathered.

Next, one starts by placing the bacon slices side by side in a pan. The chicken is placed on top of these slices and then the garlic cloves, onion and peppercorns are added.

Now all that is left to do is cook it until it has a nice, crispy exterior. It will be done when there’s no more juice coming from the pan. The chicken is removed from the pan and then is put on a serving plate.

The yummy crispy bacon is now to be placed on top of the chicken.
